Cream Of Mushroom And Bacon Soup
INGREDIENTS (per person):
- 100grams oyster mushrooms (cut in stripes)
- 80 grams double cream
- 50 grams butter
- 3 strips of bacon (thick)
- 4 medium garlic cloves
- salt
- 1/3 to1/2 cup chopped dill (or other fresh herbs)
PREPARATION:
- chop or cut bacon into not too small pieces
- fry in frying pan on medium heat together with the garlic cloves until getting slightly crispy
- then add butter and mushrooms into the frying pan and let it all simmer at medium heat with the lid on (for about 5 minutes)
- remove the lid and add salt to taste
- still on medium heat add the double cream and stir
- add the fresh herbs (chopped) at the end and stir for about one minute
- done!
Serve in a bowl!
